This Farmer’s Sausage recipe is phenomenal, whether you make sausage patties or stuff hog casings to make link sausage.

2 1/2 pounds ground venison
2 1/2 pounds ground pork
2 tbsp salt
1 tsp freshly ground black pepper
1 tsp cayenne pepper
2 tsp brown sugar
1 tbsp Tabasco sauce
1 tbsp paprika
1 tbsp Worcestershire sauce

Combine all ingredients, mix well & stuff into hog casing.

To make patties, simply form into patties and cook right away. Or, divide sausage into one-pound portions, wrap in freezer paper, label and place in the freezer.

TIP: We smoked this sausage and it turned out to be one of the best sausages we’ve ever made. We’re definitely going to use this one again.
