One of our favorites, this Italian Sausage recipe is extremely easy to make and tasty.

2 1/2 pounds ground venison
2 1/2 pounds ground pork
1 tablespoon course ground black pepper
1 tablespoon salt
1 tablespoon anise seed
6 cloves garlic, pressed
1 tablespoon fennel seeds
1 cup chilled red wine or ice water

Combine all ingredients, mix well and stuff into castings. Broil under medium heat or pan-fry.

It’s just as easy to skip the casings and just create one pound packages for the freezer. Use as you would ground beef when it’s time to create a meal like spaghetti, meatballs, ziti, or other Italian dish, including pizza.
