I’m canning today. We use as much of a deer as we can, including making venison stock with the bones. I’ve had two leg bones simmering on the stove since this morning along with an onion, carrots and celery. I’m getting ready to start preparing the jars and lids (washing and sterilizing them). If you click on this page and scroll down just a bit you’ll see my recipe for canning venison stock as well as how to can venison stew. I use our venison stock throughout the year, depending on our needs, but mainly we use it for soups and gravies.
Well, I’d better get back to it so I can be finished before the day ends!
